The legacy rancher.com/docs paths now return 502 and fail the build link check. Point K3s links to docs.k3s.io and RKE links to rke.docs.rancher.com, keeping the same anchors.

The legacy rancher.com/docs paths return 502, which fails the build link check on the K3s and Rancher install pages.
This change points K3s links to docs.k3s.io and RKE links to rke.docs.rancher.com in all published Calico Open Source and Calico Enterprise versions. The RKE2 install page now links to the RKE2 quick start instead of RKE1 documentation. Each new URL and anchor was checked and resolves.
