Drop Education from the navbar

[FindMalek]

Removes EDUCATION from NAV_ITEMS. The Education section itself stays on the homepage.

"education" also comes out of the desktop header's useActiveSection list, so scrolling through Education keeps the previous nav item highlighted instead of highlighting nothing. The chatbot's own section tracking in providers/chat-provider.tsx still includes Education, so its context is unchanged.

pnpm lint: 0 errors. pnpm build passes.
