Summary

Bump plugin and package versions to 1.2.1 after PR Register the recent-entries widget in window.openStationWidgets #60 fixed the Recent submissions widget registration.
Add a regression test for the current and legacy widget registries.
Credit Juan Lentino in the WordPress changelog.

Verification

ALLTFO_SKIP_DEPLOY=1 npm run plugin:package: 471 tests passed, 2 skipped; typecheck and all bundles built; 1.2.1 zip packaged.
No screenshot needed: this changes the widget mount registration, with no visual layout change.
